Definition and Parameters

High Amylose Corn Starch (HACS) is a natural high-molecular-weight carbohydrate extracted from specially bred high-amylose maize varieties. Unlike regular corn starch, which typically contains a 28:72 ratio of amylose to amylopectin, HACS features an amylose content exceeding 50%, often reaching 70% to 80%. This unique molecular structure endows it with exceptional resistant starch properties, a high gelatinization temperature, low swelling power, and superior film-forming and mechanical strength. It serves as a core ingredient in functional food development for lowering the glycemic index (GI) and increasing dietary fiber, while also acting as a vital industrial base material for biodegradable plastics, eco-friendly packaging films, and pharmaceutical excipients.

Regarding key physicochemical parameters, HACS exhibits thermal and rheological characteristics that are distinctly different from regular starch. Its gelatinization onset temperature (To) and peak temperature (Tp) are significantly higher than those of regular corn starch, typically above 80°C, with a characteristic "S-shaped" pasting curve rather than the typical double-peak profile. In terms of solubility and swelling power, these values decrease markedly as amylose content increases, allowing it to maintain granule integrity during high-temperature processing. Furthermore, HACS predominantly features B-type crystallinity with a degree of approximately 19.59%, which is more tightly packed compared to the A-type crystallinity of regular corn starch. Nutritionally, it is rich in Resistant Starch (RS) and Slowly Digestible Starch (SDS), making it an excellent natural source of dietary fiber.
